Overview The Director of Catering is responsible for the management of all aspects of the Catering and Banquet department in accordance with company standards.  The Director of Catering coordinates details and menus for client’s functions and monitors budgeted revenues through solicitation of business while controlling expenditures.  This Director of Catering is also responsible for ensuring maximum guest satisfaction by constantly and consistently maintaining a high level of service and corrects operating procedures.

This position is responsible for booking events, departmental hiring, corrective actions, termination, employee relation issues, forecasting and budgeting.

Responsibilities
  • Capable of maintaining a high level of service and proper operation procedures as directed by Food and Beverage VP
  • Has understanding of reasons for ensuring security and confidentiality of client information and hotel data.
  • Experience in Budgets and forecasting.
  • Capable of monitoring payroll and product costs and quality of product daily.
  • Can prioritize and organize work assignments and delegate work as required in an active catering operation.
  • Remain aware of competitors and industry trends.
  • Reviews banquet sales, resolves discrepancies with accounting department and tracks revenue against the budget.
  • Actively solicits and book business following hotel standards.
  • Meet with Culinary on each function to verify arrangements and accuracy of Banquet Event Order.
  • Conduct weekly preview and daily review meetings.
  • Prepare monthly booking reports.
  • Monitor, maintain and distribute a monthly lost business report. Ensure appropriate pieces of lost business are traced for future solicitation.
  • Ensure a safe working environment for all employees.
  • Other duties as assigned
Qualifications A college degree is preferred; and five years Banquet/Catering management in high volume operation or equivalent combination of education, training or experience that has provided the required knowledge, skills and abilities to perform the job duties is required to successfully perform this job.

  • Ability to understand and comply with all company and departmental rules and regulations, policies and procedures.
  • Skill in establishing and maintaining effective working relationships with staff, related departments and guests. Ability to maintain confidentiality of sensitive information.
  • Knowledge of food and beverage cost accounting, payroll, forecasting and budgeting.
  • Must be familiar with traditional and contemporary styles of cuisine.
  • Must be aware of contemporary nutritional and health requirements of customer base including dietary and safe food restrictions.
  • Must have a working knowledge of food and labor costs and how they are affected by the actions of the catering department.
  • Capable of managing an office staff and must be proficient in personnel operations in a large hotel.
  • Capable of successfully operating computers including word, excel, micros, Delphi or OPERA system and spreadsheet applications.
