
Since May 2020, Bryan O’Shields has held the position of Executive Vice President of Food and Beverage a Fontainebleau Development. Bryan is an integral part of the Executive Operations Team, providing key strategic and operational direction to the Food and Beverage departments. He mentors, develops and leads his leadership team to deliver exceptional experiences for guests, including the most authentic and innovative culinary offerings.
Bryan brings over 25 years of experience to Fontainebleau Development, having provided oversight and direction to many global organizations, taking them from conceptual development phases to companies with operational excellence. He has led an impressive career, holding positions at top global hospitality companies including Atlantis Resort and Casino, Paradise Island, Bahamas. Vice President of Caesars Entertainment’s Caesars Palace, Rio, and Harrah’s properties in Las Vegas. Corporate Vice President of Food & Beverage for KSL Resorts, a resort company based in Irvine, California. Corporate Senior Vice President of Food & Beverage for Fontainebleau Resorts. Vice President of F&B – Worldwide for the Mandarin Oriental Hotel Group. Based in Hong Kong he developed and opened nine new hotel properties globally. He was accountable for the creation and opening of over 35 individual innovative F&B concepts in MO hotels globally. Bryan’s role included developing award-winning restaurants and lounges in such hotels as Mandarin Oriental, New York at the Time Warner Center and Mandarin Oriental, Washington, DC, Mandarin Oriental Landmark -Hong Kong, Chiang Mai, Thailand, Boston, Prague, Barcelona, and Tokyo.
Before Mandarin Oriental, he held the position of opening Vice President of Food and Beverage for Bellagio Hotel and Casino in Las Vegas. Bryan was instrumental in the development and profitable operation of all F&B outlets within the property while working with such talents as Jean George Vongerichten, Julian Serrano, Todd English, Michael Mina, and Sirio Macioni. During his tenure, the hotel was awarded the AAA Five Diamond Award for outstanding service and quality.
A native of South Carolina, O’Shields earned a Bachelor of Science in Hotel Administration from the University of Nevada, Las Vegas. He resides in Davie, Florida with his wife, Brie.
