Erik Mrdak, CFBE, is a Houston native with many years of expertise in Food and Beverage roles, has been there and done that for properties in New York, Colorado, South Carolina, New Jersey, Alabama, Wisconsin, Oklahoma, New Mexico, Arizona, Texas, and now California, with extensive experience in Native American Gaming. Erik joined the Thunder Valley Casino Resort in Northern California in the fall of 2023.
He is known for his design and creativity, re-branding, start-ups, and lucrative leveraging for luxury hotels, destination resorts, and casinos.
Erik’s credentials in the world of food and beverage are impressive. He is a member of the prestigious Chaîne des Rôtisseurs Ordre Mondial des Gourmets Dégustateurs, the international gastronomic society dedicated to bringing together both professional and non-professional members worldwide who appreciate and share a mutual interest in cuisine, wine, and dining. His other honors, memberships, and/or certifications include the Baillaige des Estats-Unis Professionnel du Vin, the 2003 and 2004 Finale Regionale du Concours du Meilleur Jeune Sommelier, the Court of Master Sommelier – American Chapter.
