ulian Griffiths is the Senior Vice President of Food and Beverage for The Venetian Resort, a luxury casino and resort located in the heart of the Las Vegas strip.
Julian graduated from Worchester Technical College in the UK with an associate’s degree in culinary skills.
Julian’s inspiration for the hospitality business was born in his parents’ Fish and Chips shop in a small town in the center of England. He has over 30 years of experience in the industry, starting in London and then Switzerland before moving to the USA.
Julian was the Vice President of Food & Beverage for the Atlantis The Royal Resort and Residences in 2020 and 2021, returning to Las Vegas in 2021 to become the SVP F&B for the Cosmopolitan and now, the Venetian. For the past 30 years, Julian has worked in Boston, New York, Dubai, and Las Vegas.
Outside of work, Julian is an avid traveler and runner. He has run the Las Vegas half marathon for five years running. In 2015, he completed the three levels of Spartan races along with a team of co-workers. Julian is also a fan of English soccer and enjoys the occasional round of golf.
Julian’s leadership style is characterized by a “hands-on” approach. He is deeply passionate about mentoring at all levels of the organization, believing that leadership is about inspiring and motivating each team member to achieve their best results.
In 2012, Julian became a founding board member of the Las Vegas Business Academy, a non-profit organization of business leaders that provides graduate school education and unparalleled mentoring to the next generation of Las Vegas business leaders. His commitment to this cause is a testament to his values and dedication to the industry. In 2021, Julian was invited to be a Fellow at The Culinary Institute of America.
Julian is passionate about the food and beverage business. He and his wife, Dara, along with their two children, Thomas and Emma, love to enjoy the culinary scene in Las Vegas, Seattle, and Dubai.
